The exclusive eight-course New Year’s Eve menu at Red Sky showcases the combined expertise and creativity of Executive Chef Andrea Montella and Chef de Cuisine Luca Russo. Each course is crafted with precision and premium ingredients, beginning with a delicate amuse-bouche followed by Pousse en Claire oyster with a refreshing lemon emulsion. The evening continues with 30 grams of Imperial Oscietra caviar served with traditional condiments, a luxurious lobster salad, and pan-seared foie gras complemented by berries and Madeira demi-glace. The richness of a 36-month aged Vacche Rosse Parmesan ravioli with porcini mushrooms and truffle adds depth, leading to a Label Rouge wild line-caught turbot with sea urchin and Champagne foam. A blood orange granité refreshes the palate before the grand finale of charcoal-grilled Japanese A5 tenderloin with hollandaise and a meticulously layered potato mille-feuille. The meal ends on a sweet note with the Gold Lemon.
